Speedy Ploughman's Sausage Rolls

Our Rob whipped this up for our Great Pink Bake Off last Friday (more to follow about our sugar-fuelled day!) and we couldn't resist sharing the recipe...

You'll need:

  • 1 pkt of Lincoln sausages
  • 1 Granny Smith apple
  • 4 pickled onions
  • 50g chopped or grated mature cheddar cheese
  • 1 table spoon of Branson pickle ( or a pickle of your choice) Good pinch mixed herbs Salt and pepper
  • 1 std size packet of ready made short crust pastry ( puff if you prefer)
  • 1 egg


Pre heat oven at 200c

  1. Cut the apple into 1/4s and cut the core out  and 1/4 the pickled onions
  2. Put both into a small food processer and roughly chop, and place into large mixing bowl
  3. Chop the cheese in the  food processer and add to the mixture (If you don't have a processer you can chop all these by hand)
  4. Remove the skins from the sausages  and then add them to the pickle, herbs, salt and pepper and mix all the ingredients in well. Cover with cling film and set to the side
  5. Take half of the pastry and roll out a thin rectangle around 4 inches wide and as long as you make it
  6. Spread the sausage mix length ways down the middle of the pasty the mix should be just a bit thicker than a sausage
  7. Beat the egg and brush along the edge of the pastry, fold over the meat mix and form a long sausage roll and press firmly to seal the edges ( use the tip of a fork to press and seal the edges)
  8. Cut the roll into individual pieces to the size you want and egg wash all over and Prick the top with a pointed knife 2-3 times and place on a not stick baking tray (If using puff pastry leave a good space between each roll Leave to rest for 10-15 min
  9. Place baking tray into the oven and cook the sausage rolls for 25-30mins ( make sure fully cooked)
  10. When cooked remove from oven leave on tray to cool and enjoy warm!
